This is a hearty, low effort, one pot meal, great for a lazy winter home-day. The only real work that you need to do is dice onion, chop carrots, and like Bob Marley said, STIR IT UP.




Ingredients (in order of use): ~1 cup diced onion ~2 tbsp EVOO ~2 lbs ground turkey/beef ~2 tbsp chili powder, garlic powder -salt, black pepper (to taste) -1 tbsp sugar -red pepper flakes (to taste) ~bay leaf ~2 cups diced tomatoes ~2 cups dried beans (soaked overnight) ~1 cup chicken/beef broth ~2 cups chopped carrots
Enjoy alone or with rice/cornbread, sour cream/yogurt, cheese, hot sauce, scallions, etc.
